¡Dead Good Fish Tacos!

Vegetables (Austen’s) - Corn on the cob, Lime, Avocado

Accompaniment (Haus of Condiments by Condimaniac) - Pineapple Salsa

Beer (Wolf & Castle) - Two Flints

What better way to spice up Halloween than with a Mexican inspired taco fiesta in honour of Día de los Muertos! Crunchy breaded fish, fruity pineapple salsa and a little kick of chilli? Cor blimey, you’re in for a treat!

Serves 2.

Ingredients:

  • White fish cut into strips

  • Mayo

  • Breadcrumbs

  • Spice mix - 2tsp paprika, 1tsp cayenne pepper, 4tsp cumin, 4tsp garlic granules, salt & pepper (or a fajita seasoning packet if your spice cupboard isn’t up to Mexican grandmother standards)

  • Small tortillas (corn ones get our vote!)

  • Corn on the cob

  • Lime

  • Haus of Condiments pineapple salsa

  • Your favourite fillings: avocado, sour cream, cheese, jalapeños, hot sauce… go wild!

  1. Mix your spices together. Stir two-thirds into enough mayo to lightly coat your fish strips, then mix the rest into your breadcrumbs.

  2. Coat the fish in the spicy mayo, then roll each strip in the breadcrumbs. Pro tip: one hand for wet, one for dry. Unless you fancy breadcrumb hands til Christmas.

  3. Air-fry at 200°C for 8-12 minutes, or oven-bake at 200-220° for 12-15 minutes, until golden, crunchy and the fish is cooked through. Keep an eye on them - ovens have more mood swings than a teenager.

  4. Sort your sides! Cook your corn on the cob however you fancy: boiled, steamed or grilled.

  5. Warm those tortillas! A quick 20 seconds in the microwave should do the trick. Give them a little longer if needed.

  6. Build your masterpiece! Pile on that pineapple salsa, crispy breaded fish, avocado and hot sauce, finished with a squeeze of lime - or stick to cheese and lettuce if thats your bag. We listen and we don’t judge!

¡Buen Provencho!

Inspired by Día de los Muertos, Mexico’s vibrant Day of the Dead celebration, these tacos bring a little colour, flavour and fiesta to your Halloween table. So gather your favourite people, raise a chilled cerveza from Wolf & Castle, and tuck in. Now thats what we call a dead good dinner!
